I found this recipe in
Lorna Sass' Short-Cut Vegetarian: Great Taste in No Time. Who would have thought that something so simple would make such an impact on taste?!? I love this herb blend so much that I'll have to start making a double batch b/c I go through it so quickly.

Chickpea Cutlets
I discovered this recipe in
Veganomicon. As long as you don't have an intolerance to gluten, then you will love this dish! It reminds me most of schnitzel, maybe even a good sub for chicken fried chicken or chicken fried steak. We ate it for dinner, but I think you could also easily have it for lunch in a sandwich or for a hearty breakfast!

Lorna Sass' Short-Cut Vegetarian: Great Taste in No Time. I made a few changes, but overall was very happy with the result. :)
